Char Grilled BBQ Corn Cobs


  • 6 corns on the cob, still in their husks
  • 3 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 50g parmesan, finely grated
  • ½ tsp smoked paprika
  • ¼ tsp cayenne, optional
  • Freshly cracked salt and pepper to season

  1. Preheat the BBQ grill plate to high.

  2. Peel back and remove the husks on the corn and the corn silks.

  3. In a mortar and pestle combine olive oil, lemon juice, parmesan, smoked paprika and cayenne if desired. Grind to form a rough paste and season to taste.

  4. Wrap each cob in two layers of aluminium foil. Place on the BBQ for approximately 25 minutes, turning regularly until cooked. Once almost cooked, remove the foil and char the cobs directly on the grill for a few minutes for extra flavour and colour.

  5. Place the corn onto a serving plate, smother in dressing and enjoy!
