Banana & Chocolate Chip Bread

Ingredients
3 large bananas
120g natural coconut yoghurt
100ml maple syrup
1 teaspoon vanilla extract
15g ground chia seeds
90ml water
140g rolled oats
140g ground almonds
2 teaspoons bicarbonate of soda
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¾ teaspoon sea salt
100g dark chocolate
Method
Pre-heat the oven to 180°C/160°C fan/gas mark 4.
Grease a loaf tin (8.5” x 4.5”).
Mash 2 bananas and then combine with coconut yoghurt, maple syrup and vanilla. Mix together in a large mixing bowl until combined.
Stir the chia seeds with the water in a small bowl and allow to sit for 5 minutes. Once the chia seeds have gelled together then combine with the mashed banana mixture.
In a separate bowl, mix oats, ground almonds, bicarbonate of soda, cinnamon, nutmeg and salt.
Add these to the mashed banana mixture and combined until fully mixed together.
Roughly chop up the chocolate, and then add to the mixture, mixing through.
Pour into the prepared loaf tin.
Slice the 3rd banana into pieces and arrange on top to decorate.
Place in preheated oven and bake for 1 hour.
Remove from the oven and carefully inset the banana bread from the tin. Place on a cooling rack and allow to cool completely before serving
